What are chef whites?

Chef whites are the traditional uniforms worn by professional chefs. They typically consist of a white double-breasted jacket, matching chef trousers, an apron, a chef hat called a toque, and sometimes a neckerchief. Chef uniforms can be any colour, like black or checked. However, chef whites are usually chosen for top restaurants because the colour symbolises cleanliness and professionalism.

Chef whites are also designed to be practical, comfortable and durable for use in the high-pressure environment of a professional kitchen. For example, chefs can effortlessly switch their double-breasted chef jackets between sides to hide stains.

Why do chefs wear white?

Chefs choose to wear white for various practical and symbolic reasons. First, the white colour makes it easier to spot stains, ensuring chefs maintain high hygiene standards and cleanliness. Second, white reflects heat better than darker colours, keeping chefs cool in hot kitchens.

In addition, the white chef's kitchen uniform represents discipline, skill, and professionalism in the culinary industry. It has a long history and tradition dating back to the 19th century, and it was popularised by Marie-Antoine Carême, one of the first celebrity chefs.

Despite white being the traditional colour, many modern kitchens now use black or other colours for a more contemporary look.
